How to change the look and feel of the menu bar like shown in sampler?

Do you mean background color and stuff like that ? If yes use a custom theme and put some css in it with the tags below :

.v-menubar { }
.gwt-MenuItem {}
.gwt-MenuItem-selected {}

If not then I do not understand your question.

Yes, thats what I mean.

then you will see the style that I would like to see. I was hoping that there was a theme style or built in style I could use as there must have been one at some point, right??
